Bran Muffins- Lula Jensen's Recipe
1 1/2 cups All-Bran Cereal
1 1/4 cups Milk
3 Eggs
1/3 cup Melted Butter
1 1/2 cups Whole Wheat Flour
3 tsp Baking Powder
1/2 tsp Salt
1/3 cup Sugar or Honey
1/2 cup Nuts
1/2 cup Dates (optional)
Soften All-Bran in milk. Add beaten eggs and shortening (no shortening listed in ingredients- must be butter) and mix well. Add dry ingredients and nuts, and stir only until combined. Pour into muffin tins and bake at 400 for 25 minutes or until golden brown.
