Pascal's Pancakes

Ingredients:
1 Egg
3/4 Cup milk
2 TBSP Canola Oil
1 TBSP Syrup
1 Cup Flour
2 Tsp Baking Powder
1/2 Tsp Salt
Butter or oil for frying
1 or 2 add-ins from the list below

Add-In Choices
1/4 Cup Grated Apple or Pear
1/2 Cup Blueberries
1/4 Cup Chocolate Chips
1 to 2 TBSP Walnut Bits

Serves 4 to 6

Directions:
1. Crack the egg into a large mixing bowl. Whisk in the milk, canola oil, and maple syrup.
2. In a small bowl, whisk together the flour, baking powder, and salt. Add the flour mixture to the egg mixture and stir just until all the ingredients are wet. The batter should be lumpy.
3. Gently stir in the add-ins of your choice. Don't stir too much, though, or the pancakes will be dense.
4. Ask an adult to help you at the stove. Lightly butter or oil a nonstick frying pan, and then warm it on the stovetop over medium heat for about one minute. Turn the heat down to medium low. Use a 1/4 cup measuring cup to pour the batter for each pancake into the pan.
5. When the tops of the pancakes start to bubble, carefully flip the pancakes over with a spatula. Continue cooking them until the undersides are golden brown. Serve with butter and maple syrup.
