Cilantro Lime Rice

 Cilantro Lime Rice made with Minute Rice

1 Cup of Water

1 Cup of Minute Rice

1 TBSP of fresh Cilantro, diced

Juice from a freshly squeezed lime


1. Squeeze the juice from a lime into a liquid measuring cup. 

2. Add water until it reaches the 1 cup mark with the lime juice already in the bottom of the measuring cup. 

3. Wash and dice fresh cilantro until you have approximately 1 TBSP.

4. Pour the lime juice and water into a saucepan and add the diced cilantro. Bring to a boil.

5. Add the 1 cup of rice to the boiling water and stir. Cover with a lid and remove from heat. 

6. Let the rice sit for 5 minutes or until the liquid is absorbed. 


Serve with your favorite meal. It is super yummy in the Cafe Rio style salad.
