 Fresh Salsa/Pico De Gallo


3- 5 Tomatoes. Diced. (Freshly picked or vine ripened the best!)

1 Green Pepper, diced

1 Medium Red Onion, diced

1 jalapeno pepper, finely minced with seeds

Fresh cilantro, washed and minced

1 Lime, fresh squeezed juice 


Dice tomatoes and squeeze out juice before placing in a bowl. Dice the green pepper and add to the tomatoes. Add finely chopped red onions and jalapeno peppers. I like everything diced very small, but especially like the jalapeno minced extremely small.  

Wash and mince cilantro. Add to your desired taste.

Squeeze the juice from the lime in with the mixture and stir. 

Add salt if desired. 


Great as a fresh salsa with chips or as Pico de Gallo.


Note: To make a larger batch, add more tomatoes and green peppers. Use the above ingredients as a guide to determine if you will need to add more jalapenos and/or onion.
