Arroz Corn Pollo

2 TBSP Oil
4 Boneless CHicken Breast
1/2 Tsp garlic
1 Cup long-grain white rice, uncooked
2 Cans Ro-Tel original diced tomatoes, ingrained
1 Can 15 oz Pinto Beans or Ranch Style Beans
1 1/3 Cup sliced Green Onions

1. Heat oil in large skillet over med-high heat. Sprinkle chicken with seasoning.
2. Cook chicken 4 minutes per side or until highly browned. Add undrained tomatoes, beans and water.
3. Place chi9cken on top of rice. Cover and simmer over med heat for 20 minutes or until liquid is absorbed and rice is tender. 
4. Sprinkle with green onions
