Potato Breakfast Casserole

4 russet potatoes, pre boiled and cut into small chunks
5 slices of bacon, cut into small chunks
1 TBSP butter
2 cloves of garlic, pressed
1 tsp salt
1 tsp ground black pepper
6 eggs, beaten
1 TBSP dried oregano (optional for me)
1 cup shredded Cheddar Cheese

Directions:
1. Preheat oven to 400 F
2. Mix potatoes, bacon, butter, garlic, salt, and black pepper in a 8x8 casserole dish.
3. Bake in a preheated oven until eggs are set and cooked through, about 10 minutes. Sprinkle with cheese, bake until cheese is melted, about 2 more minutes.
