Mississippi Caviar

1 (15 oz) Can each of blackeye peas, black beans, and corn, drained
2 Tomatoes, diced
1 medium onion, diced
1 medium green bell pepper, diced
3 TBSP minced garlic (about 8 cloves)
1/2 cup chopped cilantro
1 jalapeno pepper, chopped
Juice of 1 lime
1 (7 oz) package dry Italian dressing mix (Good Seasons)
1/2 cup extra-virgin olive oil
1/2 cup vinegar

1. Combine first 10 ingredients (peas through lime juice) in a large bowl. Stir well. Combine dressing mix, oil and vinegar.
2. Pour over pea mixture. Stir well. Chill at least 2 hours.

Serve with tortilla chips. Makes 8 cups: serves 16.
