Meatloaf- Tomato Gravy

2 lbs Hamburger
1 lb Italian Sausage
1 large Onion
1 Tsp Salt
Dash of Pepper
1 Tsp Sage
2 Eggs
1/2 Cup of either Oatmeal (uncooked), or crushed Saltine Crackers
Diced tomatoes
Tomato Juice

Mix all ingredients well, especially if you are mixing meat. Kneading usually works the best. Spread in a rectangle pan and pour tomato juice over top, just to cover.

Bake at about 400 degrees for an hour.

Tomato Gravy

Pour juices off of cooked meatloaf into a saucepan. Add a little tomato juice and enough flour to thicken, 1 to 2 TBSP, depending on the amount of juices. Bring to a boil and serve.
Good on baked potatoes or mashed potatoes.
