Sweet Potato Coins

Ingredients:
2 Medium-size Sweet Potatoes, peeled and sliced about 1/4 inch thick
1 TBSP Vegetable Oil or Olive Oil
Salt and Pepper to taste

Serves 2 to 3

Directions:
1. Heat the oven to 400F. Use small, round cookie cutter (up to 2 inches or so) to cut out a bunch of "coins" from the sweet potato slices. To make it extra easy, place the flat end of a wooden spoon on top of the cookie cutter and press down on the spoon.
2. Put the potato coins in a mixing bowl. Drizzle the oil on top, and stir with a wooden spoon until the coins are evenly coated.
3. Line a baking sheet with aluminum foil. Then, place the coins on the sheet, spacing them slightly apart. Sprinkle on salt and pepper.
4. Ask an adult to help you with the oven. Bake the coins until the bottoms are golden brown, about 10 to 12 minutes. Remove them from the oven, and use a spatula to flip them over. Bake the coins for another 10 to 12 minutes.
