Chicken Stir Fry

Chicken breast or tenders cut into cubes
Sliced onions
Sliced Green Peppers
Mushrooms
Bean sprouts
Snow Peas (sugar peas are not good in this)
Water Chestnuts
Soy Sauce
Olive Oil
Rice

1. Add 1 TBSP of olive oil and 1 TBSP of soy sauce to a fry pan. Add your chicken and brown on both sides, I like to pretty much cook it until it is almost done.
2. Add the veggies and a little bit more soy sauce. Fry until the veggies are tender or to your liking.
3. Serve over cooked rice

If cooking from freezer. Do everything the same as above, but defrost your chicken so it is just barely soft and not cooked from the defrost setting in the microwave. I do not defrost the veggies but simply open the package and squish it so that is naturally starts to defrost while the chicken is defrosting. It will take a little longer to cook to get them to the desired tenderness, but they defrost and cook quickly enough.
