Spicy Sriracha Shrimp Tacos with Cilantro Lime Slaw

Ingredients:
* 8-12 Corn or Flour tortillas
* 1 Pound of Shrimp (fresh or frozen/thawed)
* 1 tsp Paprika
* 1/2 tsp Garlic Powder
* 1/4 tsp Ground Cayenne Pepper
* 1/4 tsp Salt
* 1/8/ tsp Black Pepper
* 1 TBSP Avocado Oil (olive oil)
* 1/2 cup Ranch Dressing (homemade or store bought)
* 2 TBSP Sriracha Chili Sauce
* 1 heaping cup finely shredded /chopped cabbage (I buy fresh coleslaw mix and use that)
* 1 Jalapeno Pepper
* 1-2 TBSP Apple Cider Vinegar
* 1 TBSP Honey
* 1 Lime
* 1/8 tsp Salt
* Fresh Cilantro to taste

Steps
1. Purchase frozen, de-veined, and peeled shrimp (I like the medium sized shrimp), defrost. (Clean and peel shrimp, defrosting if needed.) Defrost, remove shell at the end, and pat dry.  Cut each shrimp into three small pieces. Mix the shrimp spices and put into a gallon ziplock bag. Shrimp spices-1 tsp Paprika, 1/2 tsp Garlic Powder, 1/4 tsp Ground Cayenne Pepper (I have never used this), 1/4 tsp Salt, and Black Pepper (I never use this either). Put shrimp in baggie with the spices and mix until all pieces are covered. Place in the fridge until ready to cook and serve. 
2. Sriracha Sauce in a bottle already to use. (Or Sriracha Ranch: whisk together the 2 TBSP of Sriracha Chili Sauce and the 1/2 cup of Ranch dressing. Mix to taste.)
3. Cilantro Lime Slaw: remove the stem/seeds/ribs from one jalapeno, cut into strips and mince. Combine with a heaping cup of cabbage, 1-2 TBSP Apple Cider Vinegar, 1 TBSP Honey, 1/8 tsp salt, and pepper. Cut your lime in half and add the juice from one half of the lime. Toss together and add as much cilantro as your heart desires. 
4. Slice the remaining half of the lime into wedges to squeeze on your tacos. Set aside to marinate while you cook the shrimp.
5. Heat a large pan or skillet to medium-high heat with 1 TBSP of oil and saute your shrimp. Cook on each side for about 2 minutes until shrimp curl and become opaque. Cook time depends on the size of the shrimp and the temps.
6. Warm tortillas if desired.
7. Assemble your tacos with shrimp, Sriracha Sauce, Cilantro Slaw, and lime wedges.

SO YUMMY!

I also like to make fresh salsa (pico de gallo): diced tomatoes, diced green peppers, both yellow and red onions-diced, 2 diced jalapeno peppers, and cilantro. Squeeze a lime in and stir it all together.
