1/2 bushel tomatoes
3 medium diced green peppers
1 large red diced pepper
3 onions large diced
10 hot jalepeno peppers(cut core and use whole pepper)
1/4 cup salt (heeping)
3 tsp garlic powder or salt
boil tomatoes for a couple of seconds. do about 1/4 of them at a time. then place them in cold water in the sink. Peel the skins off and core. blend 1/2 of tomatoes and diced 1/2. blend the jalopeno peppers. mix everything together. simmer for 1-3 hours. longer simmered should be thicken (1 1/2)
Then bottle. place only in bottles that go directly in pressure cooker.
This is the recipe used to bottle hot sauce
