Beef Souvlake with Peppers

1/2 cup fresh mint, minced
2 tbsp olive oil
1 garlic clove minced
1/2 tsp cracked black pepper
grates zest and juice of 1 lemon
1 tbsp dried thyme
3/4 tsp salt
4 red or green peppers cut lengthwise
1 1/2 lb boneless beef sirloin trimmed and cut into 2" pieces
1/2 cup red wine

In nonaluminium container mix wine, mint, lemon zest, and juice,oil, thyme, garlic, salt and pepper, beef.
Cover and refrigerate, stirring once at least 2 hours or overnight
Position rack 4" from heat source. preheat broiler.
remove meat from marinade and thred peppers onto skewers. Brush on marinade.

Broil turning once 8-10 minutes for med rare
