Artichokes

wash artichokes in cold water. cut off about 1 inch of top and cut off stem about 1 inch from base. with scissors clip of the tip of each lead. place artichokes in sauce pan. stem sides down. pour in boiling water to cover. add 1/2 tsp salt, 1/2 clove of garlic, 1/4 lemon thinly sliced and 3 tbsp oil. cover pan-boil gently 20-30 minutes until leaves can be pulled easily from stock. drain well, serve with melted butter
