Dressing:
2 large cloves garlic,minced
1 TBsp dijon mustard
1/2 tsp salt
1/4 tsp sugar
1/4 tsp ground black pepper
1/4 cup rice vinegar
1/3 cup vegetable oil
Combine all ingredients in food processor and blend throughly
Salad:
1 box Uncle Ben's Original Long Grain and Wild Rice
(2) whole chicken breast cooked and cubed
3 green onion, including tops, sliced
1 red pepper diced
2 oz fresh snow peas, cut into 1 inch pieces
3 ripe avocados, cut into bit sized pieces
2 cups toasted pecan halves
prepare rice as directed, toss warm rice in medium bowl and let cool. Add chicken, onions, red pepper and pea pods, toss with dressing. Cover. Refrigerate 2-4 hours. Just before serving add avocados and pecans. toss gently. transfer to salad bowl. garnish with lettuce leaves
Make in a large bowl
Bake at 350 degrees 10-20 minutes. Watch closely
